I try and do the paperwork as much as I can around my teaching hours. I'm in office both days, but only teach four lectures. [Of course there's tutoring to manage too, and it always does run over, but he has the rest of the week to do it, so it's never been a problem.]

Perhaps Friday or Saturday would be best, then. Friday would be preferable for me.
